Original RecipeIus in Sarda (from Apicius' De Re Coquinaria IX,10,3)Ius in Sarda: piper, origanum, mentam, cepam, aceti modicum et oleum. TranslationSauce for sardines: Pepper, oregano, mint, onion, a little vinegar, oil. Ingredients:
60ml extra-virgin olive oil Method:Whisk together the ingredients for the vinaigrette and serve over the fish. This goes well with crisp-fried sardines or whitebait and also works with any boiled, or baked fish (it can also be used with cold fish and works excellently with tuna sashimi). |
