Original RecipeAliter porros (from Apicius' De Re Coquinaria III,10,3)ALITER PORROS. In aqua coctos, ut supra, et inferes. TranslationCook the leeks with laurel berries, and otherwise treat them and serve as above (this refers to the Boiled Leek Salad recipe). Ingredients:
4 leeks, trimmed Method:Add the leeks and juniper berries to a pan, cover with salted water and bring to a boil. Reduce to a simmer and cook until tender (about 20 minutes). Drain and allow to cool then slice the leeks and add to a serving bowl. Whisk the ingredients for the dressing together, add to the leeks and toss to combine. Season with black pepper and serve. |
