(Boiled Leeks in Cabbage Leaf Salad)

Original Recipe

Aliter porros (from Apicius' De Re Coquinaria III,10,1)

ALITER PORROS. Opertos foliis coliculorum et in prunis coques, ut supra, et inferes.

Translation

Wrap the leeks well in cabbage leaves, having first cooked them as directed above and then finish them in the above way (this refers to the Boiled Leek Salad recipe).

Ingredients:

4 leeks, trimmed
16 (or more) white cabbage leaves
4 tbsp olive oil
3 tbsp red wine
2 tsp fish sauce (Nam Pla), or to taste
black pepper, to taste


Method:

Add the leeks to a pan, cover with salted water and bring to a boil. Reduce to a simmer and cook until tender (about 20 minutes).

Meanwhile, trim the mid-rib from the cabbage leaves and blanch with the leeks in the pan for 2 minutes.

Drain the leeks and cabbage learves and allow to cool then slice the leeks into 3cm lengths. Wrap these in the blanched cabbage leaves then place in a serving bowl. Whisk the ingredients for the dressing together and pour over the leek and cabbage rolls. Season with black pepper and serve.
