(Another Sauce for Roast Meat)

Original Recipe

Aliter dulcia (from Apicius' De Re Coquinaria VII . V . 2)

Aliter assaturas: petroselini scripulos sex, laser scripulos sex, gingiberis scripulos sex, lauri bacas quinque, condimenti, laseris radicem scripulos sex, origani scripulos sex, cyperis scripulos sex, costi modice, pyrethri scripulos tres, apii seminis scripulos VI, piperis scripulos XII, liquaminis et olei quod sufficit.

Translation

6 scruples each of parsley,laser, ginger, 5 laurel berries, sufficient seasoning, 6 scruples each of asafoetida root, oregano, and galingale, a little costmary, 3 scruples of pyrethrum, 6 scruples of celery-seed, 12 scruples of pepper, and sufficient liquamen and oil.

Ingredients:

8g parsley, chopped
8g ginger, finely grated
3 drops asafoetida extract
5 laurel (or juniper) berries
8g oregano
8g galingale
large pinch of costmary
4g chopsuey greens
8g celery seed
16g pepper
50ml liquamen
60ml olive oil


Method:

The recipe is simplicity itself: Blanch the chopsuey greens for 10 seconds in boiling water, rinse under a cold tap and chop then mix all the ingredients together and serve as a condiment for roast meat. The original recipe calls for pyrethrum, a form of chrysanthemum that's toxic. I've replaced this in the recipe with chopsuey greens.
