These are all recipes from the Roman Empire (covering the period 500 BCE to 400 CE) and derived from across the Roman world. Though many of the recipes derive from Apicius' De re coquinaria ('On the Subject of Cooking'), [late 4th century], I have sought to find and present recipes here from as many classical sources as possible to give you a cross-section of Roman foods and Roman cooking methods. This is why you will find a number of Greek recipes in this collection. Not only was Greek the second language of the Roman Empire, but many cooks in Roman houses were Greek slaves and they brough a number of Greek recipes and cooking practices with them.

For all the recipes below the original Latin (or Greek) text is given, along with a translation and a modern redaction that will allow you to prepare the dish in your own kitchen.
