Arborio rice

Arborio rice is the classic risotto rice from the Piedmont region of northern Italy. It is a fat medium-grained rice that can absorb a lot of cooking liquid whilst still retaining a good 'bite' (ie doesn't become too soft) when fully cooked.

The rice itself is named after the town of Arborio, Italy (in the Po Valley) where it is grown. Arborio rice is a cultivar of the japonica subspecies of Oryza sativa (rice).
