Yetaklet W'et Recipe

Origin: Ethiopia      Period: Traditional

Ingredients:

200g finely-chopped onions
2 cloves garlic, pressed
1 tbsp Berbere spice
1 tbsp paprika
60ml ghee
200g sliced green beans
200g carrots, chopped
200g potatoes, cubed
200g tomatoes, chopped
60ml tomato paste
500ml vegetable stock
salt and black pepper to taste
50g fresh parsley

Yetaklet W'et Preparation:


Method:

Fry the onions, garlic, berbere spice and paprika in the ghee for 2 minutes. Add the beans, carrots and paprika then fry for 10 minutes, stirring occasionally to prevent burning. Add the tomatoes, tomato paste and stock at this point. Bring the mixture to a boil, reduce to a simmer, cover and cook for 15 minutes or until the vegetables are tender. Season, add the parsley and serve immediately.
