Winter Vegetable Casserole with Cider and Pears Recipe

Origin: Britain      Period: Traditional

Ingredients:

2 turnips, peeled and sliced into rings
1 celeriac, peeled and sliced
4 parsnips, peeled and sliced
2 pears, cored and sliced into rings
2 waxy potaotes (Charlotte type), peeled and sliced
1 onion, finely sliced
90g grated cheese
3 tbsp fresh parsley, chopped
3 tbsp fresh white breadcrumbs
150ml dry cider
1 tbsp cider vinegar
60g butter
salt and black pepper, to taste

Winter Vegetable Casserole with Cider and Pears Preparation:


Method:

Parboil all the vegetables then toss to mix with the pears and scatter in the base of an ovenproof dish. Season well and pour the cider and vinegar over the top. Meanwhile mix together the breadcrumbs, cheese and parsley. Sprinkle over the vegetables to form a topping. Dot the dish with the butter then place in an oven pre-heated to 190°C and bake for 50 minutes, or until the vegetables are tender and the topping is golden.
