Wild Greens with Ham, Orange and Mint Recipe

Origin: Britain      Period: Traditional

Ingredients

1 onion, finely chopped
1 tbsp ham or bacon fat (or olive oil)
675g mixed wild greens (eg: mustard greens, young dandelion, good king henry, fat hen, chard, purslane)
150g diced ham or bacon, cooked
30g chopped water mint (or garden mint)
1 egg yolk
60ml orange juice
1 navel orange, peeled and cut into segments

Wild Greens with Ham, Orange and Mint Preparation:


Method:

Add the fat to a large pan and heat. Meanwhile wash the greens and chop them coarsely. Add these to the pan along with the ham and the mint. Cover and allow to cook gently for about 15 minutes, or until the greens have wilted. Drain well (the liquid makes an excellent base for a soup).

Place the greens in a warmed bowl. Beat together the egg yolk and the orange juice and pour over the greens. Arrange the orange segments on top and serve immediately.
