White Soda Bread Recipe

Origin: Irish      Period: Traditional

Ingredients:

500g soda bread flour
1 tsp bicarbonate of soda (baking soda)
1 tsp salt
25-50g castor sugar
400–475ml buttermilk
25g butter

White Soda Bread Preparation:


Method:

Sift the flour, bicarbonate of soda and salt into a large bowl, add sugar and mix well. Pour in 400ml of the buttermilk, mixing lightly with a wooden spoon until the dough is springy, adding more buttermilk if you need it.

Grease a 20 x 10cm loaf tin and spoon the dough into the tin. Sprinkle a little flour over the top and bake in an oven pre-heated to 180°C for half an hour. Turn the heat down to 150°C and bake for another half hour until the loaf is nice and crusty on top. Take the loaf out of the oven and leave in the tin for 5 minutes. Turn out of tin and cool on a wire rack.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
