White Chocolate Cashew Brownies Recipe

Origin: South Africa      Period: Traditional

Ingredients:

120g butter
400g brown sugar
2 eggs, beaten
1 tsp vanilla extract
175g plain flour
2 tsp baking powder
150g white chocolate chunks
150g toasted cashew nuts, roughly chopped

White Chocolate Cashew Brownies Preparation:


Method:

Melt the butter in a pan and stir-in the brown sugar until combined. Take the mixture off the heat and set aside to cool.

Once the butter and sugar mix is cold add the eggs, vanilla, flour and baking powder. Blend thoroughly to combine then fold in the chocolate and nuts. Pour the resultant batter into a greased tin (about 22 x 30cm). Transfer to an oven pre-heated to 160°C and bake for about 30 minutes, or until browned on top and a skewer inserted into the centre of the cake emerges cleanly.

Remove from the oven and allow to cool for 20 minutes before cutting into squares and serving.
