Vieras a la Gallega
(Scallops in Mustard Oil) Recipe

Origin: Spain      Period: Traidtional

Ingredients:

1 tsp olive oil
4 large scallops (with shells)
1 tsp garlic, minced
5 green olives stuffed with anchovies, chopped (or green olives and anchovies sourced separately)
1 tsp capers
1 tsp Dijon mustard
240ml whipping cream
1 tsp unsalted butter
1/2 tsp seasoned breadcrumbs

Vieras a la Gallega
(Scallops in Mustard Oil) Preparation:


Method:

Heat the olive oil in a frying pan over medium heat then add the scallops and garlic and cok for 5 minutes, turning the scallops over half way through. Now add the olives (and anchovies), capers, mustard, cream and butter. Continue to cook for about 9 minutes (or until the volume has reduced by half), stirring from time to time.

When ready spoon the scallops into their shells (accompanied by some of the sauce). Place the shells in an ovenproof dish, sprinkle with the breadcrumbs then place in an oven pre-heated to 170°C and bake for about 3 minutes, or until the top is nicely browned (but be careful they do not burn).
