Svekolnik is a classic Belarusian beetroot stew or soup, closely related to Broscht. If uses kvass which is a fermented bread drink very popular in Belarusia and Russia. It's very low in alcohol and typically sold as a soft drink. Ingredients
4 young beetroot (with leaves)
Svelkonik Preparation:Method:Cut the stalks and leaves from the beetroot, wash and remove the stalks then set aside. Peel, wash and dice the beetroot themselves then add to a pan along with the chopped stalks. Add a little water and the vinegar, bring to a simmer and cook until done (about 50 minutes). About 10 minutes before the soup is ready shred a good handful of the beet greens and add to the soup then set aside to cool down. Whilst the soup mix is cooling chop the spring onions, dill and radish. Chop the esgs very finely, peel and dice the cucumbers. Add the kvass into the pot with the beetroot then turn into a bowl and stir-in the salt and sugar along with the cucumber, radish, spring onions, dill and chopped eggs. Serve with sour cream on the side |
