Ingredients
3kg semi-boneless ham
Ukrainian Easter Ham Preparation:Method:Remove the covering of skin from the ham then wipe down with a wet paper towel before drying thoroughly. Trim the fat to a depth of 1cm then score in a diamond pattern. Set the ham on a wire rack in a roasting tray and transfer to an oven pre-heated to 180C. Roast for about 30 minutes. Now whisk together the honey, mustard powder, vinegar and pan drippings in a bowl to form a glaze. Cook the ham for a further 20 minutes, basting frequently with the glaze. Remove from the oven and baste once more. Set aside to cool and when cold cover loosely and refrigerate. Serve sliced as thinly as you can and accompany with mayonnaise and a hot (eg English) mustard. Traditionally this dish is accompanied by tsvikly (beetroot with horseradish).
