Tutmanik
(Cheese Bread) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

250ml plain yoghurt
2 medium eggs
60ml olive oil
225g Feta cheese, crumbled
1/2 tsp salt
300g plain flour
1 tsp baking powder
1/2 tsp paprika
1 tsp caraway seeds, lightly crushed

(Cheese Bread) Preparation:


Method:

Combine the yoghurt, eggs, oil, cheese and salt in a bowl. Meanwhile sift together the flour and baking powder in a separate bowl. Slowly add the yoghurt mix to the flour a little at a time, mixing thoroughly after each addition.

When you have a smooth batter pour into a well-greased 22 x 22cm baking dish. Sprinkle the top with the paprika and caraway seeds then transfer to an oven pre-heated to 200°C and bake for 20 minutes, or until the top is firm and golden brown and a skewer inserted into the centre of the loaf emerges cleanly.

Allow to cool in the dish for 10 minutes then transfer to a wire rack to cool completely.
