Turkish Delight Recipe

Origin: Turkey      Period: Traditional

Ingredients

2tbsp Cornflour
230ml Water
1/2 tsp Cream of Tartar
1 tsp Flavouring (any of: rose water, mastic, strawberry, orange, lemon)
a fel drops of food colouring (red, yellow, green or orange depending on the flavouring used)
120g Toasted nuts, chopped (almonds or pistachios)


Turkish Delight Preparation:


Method:

In a pan, mix the sugar and cornflour together and dissolve in the water. Add the cream of tartar and bring to the boil. Cover and cook for five minutes. Bring off the boil, add the flavouring and colour along with the nuts. Stir together then pour into a shallow pre-oiled pan. (if desired you can divide into two or three batches and add separate flavourings/colourings).

When completely cold cut into squares, roll in icing sugar and store in an air-tight tin.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
