This is an interesting English twist on the Italian pizza which is made from a bread-like dough that's pressed into a shallow tray with a lip so the bread forms a kind of container. The middle can then be filled with cream cheese or custard mixes (such as in quiches). In many ways, the dish is like a cross between a pizza dough, a Yorkshire pudding and a quiche. Ingredients
240g unbleached strong bread flour
Tray Bread Preparation:Method:Combine the flour, salt and yeast in a bowl. From a well in the centre and ad the egg, melted butter and water. Mix with a fork (or your fingers) to combine then turn the dough out onto a lightly-floured work surface and knead for at least 5 minutes, or until soft and elastic. Form into a ball, place in a greased bowl then cover and set aside in a warm place for about 90 minutes, or until doubled in volume. Knock the dough back then roll out on a lightly-floured work surface into a square slightly larger than your tin then use to line a lightly-greased shallow, square, baking tin. Add your choice of filling then transfer to an oven pre-heated to 190°C and bake for about 30 minutes, or until the dough is nicely golden and the topping is cooked through. |
