Tomato and Pepper Relish with Preserved Lemons Recipe

Origin: Morocco      Period: Traditional

Ingredients

2 small green bell peppers
800g tinned tomatoes
1 garlic clove, minced
2 tbsp olive oil
3/4 tsp ground cumin
1/4 tsp paprika
1/4 tsp black pepper
3 Preserved Lemon quarters, chopped

Tomato and Pepper Relish with Preserved Lemons Preparation:


Method:

Char the bell peppers in a griddle pan or directly against a gas flame. Allow to cool then peel, remove the stems and the seeds before chopping the flesh.

Drain the tomatoes before coarsely chopping them. Mix the tomatoes with the peppers, garlic, oil, cumin, paprika and black pepper. Add the preserved lemon to taste and serve.
