Tajin d'Artichauts Tunisienne
(Tunisian Artichoke Tagine) Recipe

Origin: Tunisia      Period: Traditional

Ingredients:

450g minced beef
6 eggs, well beaten
4 parsley sprigs, finely chopped
1 onion, finely chopped
3 garlic cloves, finely chopped
1/2 tsp salt
1/4 tsp freshly-ground black pepper
6 large artichoke hearts, halved
2 tbsp Gruyère cheese, grated

Tajin d'Artichauts Tunisienne
(Tunisian Artichoke Tagine) Preparation:


Method:

Combine the meat, parsley, onion, garlic, salt and black pepper in a bowl. Stir well to combine then add the eggs and mix in thoroughly. Turn the mixture into a well-greased loaf tin then arrange the artichoke hearts on top, spaced evenly. Press the artichokes into the meat mixture then sprinkle the cheese on top.

Transfer to an oven pre-heated to 180°C and bake for about 30 minutes, or until the cheese is well browned and the meatloaf is cooked through. Allow to cool in the tin for 5 minutes then turn out onto a cutting board, slice and serve.
