(Tahini and Grape Molasses) Recipe

Origin: Turkey      Period: Traditional

Ingredients:

250ml tahini (sesame seed paste)
125ml grape molasses (this is the same as roman Defritum, basically grape juice boiled down to 1/3 of its original volume)

(Tahini and Grape Molasses) Preparation:


Method:

Place the tahini in a bowl and, whilst stirring constantly, slowly add the grape molasses. Whisk to combine the ingredients and serve this dessert (or breakfast dish) thickly spread over Turkish bread (use French bread if no Turkish bread is available).

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
