(Baked Meat and Potatoes) Recipe

Origin: Libya      Period: Traditional

Ingredients:

2 large potatoes, peeled and cut into 2cm thick slices
100g minced beef
1 onion, finely chopped
1 garlic clove, finely chopped
generous pinch of hot chilli powder
1/4 tsp curry powder
2 eggs, beaten
40g grated Mozzarella cheese
oil for frying

(Baked Meat and Potatoes) Preparation:


Method:

Bring a pan of lightly-salted water to a boil. Add the potatoes and boil until tender (about 20 minutes). Drain the potatoes, transfer to a bowl and crush lightly with a fork.

Meanwhile, add the oil to a frying pan and use to cook the onion and garlic until soft (about 6 minutes). Stir-in the meat and continue frying until well browned and almost cooked through (abut 6 minutes) then stir-inthe chilli and curry powder. Fry for 2 minutes more then take off the heat, transfer to the bowl with the potatoes and set aside to cool.

Once the meat mixture is cold add the eggs and stir to combine. Transfer the potato and beef mix to a baking dish then place in an oven pre-heated to 170°C and bake for about 20 minutes. Remove from the oven then spread the Mozzarella cheese on top and return to the oven. Bake for a further 15 minutes, or until the cheese is nicely browned.

Serve hot. Quite often, this is served as a breakfast dish.
