Tabahij Recipe

Origin: Libya      Period: Traditional

Ingredients:

1 medium aubergine (eggplant), diced
3 tomatoes, diced
1 courgette, diced
4 potatoes, peeled and diced
1 tbsp tomato purée
4 green chillies, finely chopped
1/2 tsp cubeb pepper, ground
1/4 tsp hot chilli powder
3 garlic cloves, finely chopped
100ml olive oil

Tabahij Preparation:


Method:

Add the olive oil to a pan and when hot use to fry the aubergine, courgette, tomatoes and potatoes over low heat for about 20 minutes, or until soft. When done, take some of the oil from the pan and use to fry the tomato purée, spices and garlic for about 8 minutes over low heat.

Plate-out the vegetables then pour the tomato and spice sauce over the top then serve.
