Sweet and Sour Okra Recipe

Origin: Egypt      Period: Traditional

Ingredients

500g small okra pods
6 medium tomatoes, blanched, peeled, de-seeded and chopped
1 tbsp honey
1 tbsp lemon juice
2 tbsp olive oil
salt and black pepper, to taste

Sweet and Sour Okra Preparation:


Method:

Wash and dry the okra before trimming the ends. Heat the olive oil in a pan and fry the okra in this for about 4 minutes, tossing the pods to fry them evenly. Now add the tamarillos and fry for 3 minutes more before adding the honey, lemon juice and 120ml water. Season liberally, bring to a boil, cover, reduce to a simmer and cook for 15 minutes (add more water as necessary). Serve hot with rice.
