Sweet Potato Fritters Recipe

Origin: South Africa      Period: Traditional

Ingredients

450g sweet potatoes, grated
100g flour
1 egg, beaten
groundnut oil for frying
salt and freshly-ground black pepper to taste

Sweet Potato Fritters Preparation:


Method:

Place the grated sweet potatoes in a bowl and cover with boiling water, allowing them to stand for 15 minutes. Drain off the water and slowly add the four and egg, ensuring that all the constituents are mixed well. You should end-up with a thick paste that holds its shape when scooped-up with a tablespoon. Season with salt and black pepper.

Meanwhile heat about 5cm depth of oil in a wok or fryer to 180°C. When the oil is ready drop the sweet potato mixture, a few tablespoons at a time, into the oil and cook the fritters for 3°5 minutes (or until they float to the surface). Turn them once to make sure that they are coloured on each side then drain on absorbent paper and serve.
