Sweet Couscous Dessert Recipe

Origin: Algeria      Period: Traditional

Ingredients:

250g couscous
160ml warm water
150g fresh dates
150g semi-dry prunes
6 tbsp melted butter
50g sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
rose petals (as decoration)

Sweet Couscous Dessert Preparation:


Method:

Place the couscous in a bowl and mix with the warm water. Allow to stand for 15 minutes. Meanwhile halve each date lengthways, remove the stone and cut into 4 pieces. Roughly-chop the prunes and mix with the dates.

Fluff-up the couscous with a fork and place in a cheesecloth-lined sieve. Steam over boiling water for 15 minutes then transfer to a bowl and fluff-up with a fork once more.

Add the melted butter, sugar, dates and prunes then pile the couscous into a cone shape on a serving dish. Mix the cinnamon and nutmeg together and sprinkle over the top. Decorate with rose petals and serve.
