Svinsko S Bel Bob
(Pork with Beans) Recipe

Origin: Bulgaria      Period: Traditional

Ingredients:

450g cooked beans (any kind)
450g pork, cubed
2 tbsp olive oil
2 large onions, sliced
200g tomato purée
2 medium red chillies, chopped
250ml beef stock
4 large tomatoes, chopped
salt and freshly-ground black pepper, to taste
dried mint, to taste
2 tbsp fresh parsley, chopped, to garnish

(Pork with Beans) Preparation:


Method:

Heat the oil in a pan and use to fry the pork until well browned all over. Add the onions and continue frying until golden brown (about 10 minutes). Stir-in the tomato purée and the chillies and fry for 5 minutes more.

Now add the stock, bring to a simmer and cook for 45 minutes then add the beans and tomatoes. Season to taste with salt, black pepper and mint and simmer for 5 minutes, or until all the ingredients are heated through. Transfer to a bowl, sprinkle with the parsley and serve.
