Ingredients:
185g crushed, round, buttery crackers
Strawberry Easter Pie Preparation:Method:Whisk together the vanilla pudding and milk (reserve 2 tbsp of the milk for later) then heat gently until thickened, take off the heat and set aside to cool. Crush the crackers into crumbs then mix with the butter before pressing into the base of a 20cm square cake tin (make certain you press the mixture part of the way up the sides of the pan. Transfer to an oven pre-heated to 190°C and bake for about 8 minutes. Remove from the oven and set aside to cool. Meanwhile, beat the cream cheese until soft then whip in the sugar and 2 tbsp milk. Spread this over the crumb base then arrange the strawberries on top. Fold the Cool Whip into the cooled vanilla pudding mix then spoon over the strawberries.
