Stir-fried Sow Thistle with Pork Recipe

Origin: Fusion      Period: Modern

Ingredients

225g shredded pork
3cm length ginger, grated
1 spring onion, roughly chopped
2 handfuls sow thistle leaves
groundnut oil for frying
4 tbsp soy sauce
1 tsp sesame oil
1/4 tsp cornflour
3 tbsp rice wine or dry sherry
salt and black pepper, to taste

Stir-fried Sow Thistle with Pork Preparation:


Method:

Mix the liquid ingredients together, stir-in the cornflour and season. Add the sliced meat to the marinade and toss to coat. Set aside to marinate for 30 minutes, tossing again half way through.

Heat a little groundnut oil in a wok or large pan until sizzling. Add the ginger and stir-fry for 2 minutes then add the onion and fry for 1 minute before adding the meat. Continue stir-frying until the meat begins to brown then add the sow thistle leaves and continue frying for a further 4 minutes. Add any remaining marinade, allow to heat through and serve.
