Steamed Crawfish RecipeOrigin: Liberia Period: Traditional |
|
'Crawfish' is the Liberian for any of the smaller Malacostraca that include shrimps/prawns, crayfish and langoustine. Though the term is most often used for whole, unshelled, prawns these being the most common in coastal areas. Ingredients
300g fresh prawns (anything up to tiger prawn size), with shells
Steamed Crawfish Preparation:Method:Wash the prawns in a colander and add to a pot along with the chilli paste. Mix together the peanut butter and the oil and add this mixture to the pan as well. Add about 60ml water, bring to a boil, cover and reduce to a simmer. Cook for about 10 minutes, or until the prawns are done. Serve immediately. These prawns make an excellent additional dish to any African meal. Simply pour the entire contents of the pot into a bowl and serve. The prawns also make a flavoursome addition to any soup or stew.
