Steak in Moroccan Spices Recipe

Origin: Morocco      Period: Traditional

Ingredients

1 medium onion, finely chopped
5 tbsp lemon juice
2 tbsp fresh parsley, finely chopped
1 tbsp ground cumin
2 tsp sherry
1 tsp dried oregano
2 large cloves garlic
120ml olive oil
2 tbsp soy sauce
6 tbsp grated ginger
1 tbsp chilli powder
1 tsp turmeric
1 tsp coarsely-ground black pepper
2kg steak

Steak in Moroccan Spices Preparation:


Method:

Mix all the ingredients (except the steak) in a large bowl. Whisk to combine then divide equally between two shallow baking dishes. Add the steak to the marinade and turn to ensure an even coating. Cover with clingfilm and refrigerate over night. The following morning turn the steak and return to the fridge.

Place the steak either under a grill, on a barbecue or on a hot griddle pan and cook to the desired degree of doneness (about 8 minutes per side).

Meanwhile, tip any remaining marinade into a saucepan and heat until simmering. Allow the steaks to rest for 5 minutes then cut diagonally into very thin slices. Arrange on a serving plate, pout the sauce over the top and garnish with chopped coriander. Serve immediately.
