This recipe for the braai (barbecue) was shown to me by a South African friend. Traditionally it would be made from springbok or oryx, but works equally well with venison. Ingredients
4 springbok steaks (substitute venison)
Springbok and Blue Cheese Rolls Preparation:Method:Add the fruit to a mortar and pound to a paste then add the blue cheese and pound well until completely mixed with the fruit. Meanwhile, place the springbok or venison steaks on a cutting board and pound until flat. Fill the centre of the flattened steaks with the blue cheese and fruit mix then roll tightly. Season liberally with black pepper then place on your barbecue. Cook until the outside of the meat is blackened (it will still be pink in the centre and the cheese and fruit mix will be bubbly). |
