South African Raisin Rice Recipe

Origin: South Africa      Period: Traditional

Ingredients

200g rice
300ml boiling water
1/2 tsp grated lemon zest
1 (3cm) cinnamon stick
1/2 tsp ground turmeric
1 tsp salt
120g seedless raisins
2 tbsp butter
3 tbsp granulated sugar

South African Raisin Rice Preparation:


Method:

Add the rice to rapidly-boiling water than add the lemon zest, cinnamon, turmeric and salt. Cover and reduce to a simmer, cooking for 20 minutes. Turn off the heat and leave to sit for 15 minutes so the rice absorbs all the water.

Add the raisins, butter and sugar and mix-in well with a fork (this will also fluff the rice). Serve as an accompaniment. The mixture can also be used to stuff a chicken and if you're doing this only boil the rice for 15 minutes.
