South African Grilled Fish Recipe

Origin: South Africa      Period: Traditional

Ingredients:

900g halibut, kinglip or swordfish steaks
3 garlic cloves, finely chopped
1/2 tsp fresh chillies, finely chopped
2 tsp freshly-ground black pepper
3 tbsp olive oil
juice of 1 lemon
1 tsp garlic powder
1 tsp dried oregano, crumbled
1 tsp dried basil, crumbled
1 tsp sea salt

South African Grilled Fish Preparation:


Method:

Combine all the ingredients for the marinade and rub all over the fish. Place in a bowl, cover and refrigerate for 2 hours.

Either heat a barbecue and cook the fish for about 10 minutes on each site, brushing frequently with the reserved marinade, or cook under a hot grill, again brushing frequently with the remaining marinade. Serve hot.
