Sour Potatoes Recipe

Origin: Czech      Period: Traditional

Ingredients

900g potatoes, peeled and cubed
salt and freshly-ground black pepper, to taste
generous pinch of freshly-grated allspice
1 bayleaf
1 large onion, finely chopped
120ml olive oil
35g plain flour
60ml sour cream
vinegar, to taste


Sour Potatoes Preparation:


Method:

Combine the potatoes, salt, black pepper, allspice and bayleaf in a pan and cover with water. Bring to a boil then reduce to a simmer and cook for about 25 minutes, or until tender.

Meanwhile, fry the onion in the oil until golden brown (about 10 minutes) then scatter the flour over the top and stir in to combine. Cook, stirring continually, for about 5 minutes, or until the flower is lightly browned then add a little of the water from the potatoes to make a thick sauce.

Stir-in the sour cream and add vinegar to taste then drain the potatoes and add to the sauce. Stir to combine and serve hot.
