(Avocado Soup in the Manner of Abidjan) Recipe

Soupe d'avocat Abidjanaise (Avocado Soup in the Manner of Abidjan) is a traditional Ivoarian (from Côte d'Ivorie) recipe for a classic dip of pureed avocadoes and chicken stock flavoured with lime juice, yoghurt and Tabasco sauce. The full recipe is presented here and I hope you enjoy this classic Ivoarian version of: Avocado Soup in the Manner of Abidjan (Soupe d'avocat Abidjanaise).

Ingredients:

2 ripe avocados, peeled and chopped
900ml chicken or vegetable stock
2 tbsp lime juice
1 tbsp plain yoghurt
2 gererous dashes of Tabasco sauce or African hot pepper sauce
salt and black pepper, to taste

(Avocado Soup in the Manner of Abidjan) Preparation:


Method:

Place the avocado flesh and the stock in a blender and proces until smooth then add the lime juice, yoghurt and Tabasco sauce. Process then season with salt and black pepper. Refrigerate for at least an hour to ensure the soup is properly chilled. Ladle into soup bowls and garnish with a very thin sice of lime and a dash of Tabasco sauce.
