Sosfarin
(Gambian Flour Soup) Recipe

Origin: Gambia      Period: Traditional

Ingredients:

200g flour
360ml oil
2 tbsp tomato paste
2 hot chillies (eg scotch bonnet)
1 tbsp lime juice
2 onions
5 tomatoes
black pepper
salt

(Gambian Flour Soup) Preparation:


Method:

Add the tomatoes, tomato paste, black pepper, garlic and onions to a pestle and mortar or food processor and render to a paste. Spoon the paste into hot oil and fry for a few minutes. Add the lemon juice and 600ml water and boil for 10 minutes. Mix the flour with 200ml water and add to the soup. Allow the mixture to simmer for 10 minutes and serve over rice.
