Slk Fel Kousha
(Baked Cheese and Spinach) Recipe

Origin: Algeria      Period: Traditional

Ingredients:

900g spinach, chopped
3 tbsp olive oil
1 onion, finely chopped
225g minced beef
1/2 tsp salt
1/2 tsp freshly-ground black pepper
120ml water
60g Gruyère cheese, grated
2 tbsp flat-leaf parsley, finely-chopped

(Baked Cheese and Spinach) Preparation:


Method:

Wash the spinach and shake the excess water away. Place in a pan and heat gently then allow to steam in the water clinging to the leaves for about 3 minutes, or until nicely wilted. Transfer to a colander and allow to drain. Press any excess water our of the spinach with the back of a spoon.

Heat the oil in a pan then add the onion and fry for 2 minutes before adding the meat. Season with the salt and black pepper then cook for 4 minutes before stirring-in the water. Bring to a simmer and cook for 5 minutes then transfer to a baking or gratin dish.

Sprinkle the grated cheese on top then transfer to an oven pre-heated to 180°C and bake for about 10 minutes, or until the cheese has melted and is lightly golden. Serve hot.
