Shrimp with Red Sauce Recipe

Origin: Ghana      Period: Traditional

Ingredients

1/2 medium onion, finely sliced
2 large, ripe, tomatoes, chopped
1 large red bell pepper, chopped
8 scotch bonnet chillies, chopped
60ml groundnut oil for frying
36 large prawns, cooked
salt and pepper to season

Shrimp with Red Sauce Preparation:


Method:

Pound the chillies and bell pepper in a pestle and mortar to form a smooth paste. Add the onion and pound that in as well, followed by the tomatoes.

Heat oil in a pan until very hot then spoon the chilli mixture into the hot oil and cook for ten minutes, stirring frequently. Spoon the sauce into a serving bowl, allow to cool then season and serve with the prawns as dippers.
