Shrimp with Calamint and Red Chillies Recipe

Origin: Britain      Period: Modern

Ingredients

4 tbsp good olive oil
1 kg large, unpeeled prawns
4 garlic cloves, thinly sliced
2 de-seeded and thinly-sliced jalapeño chillies
100ml dry white vermouth
2 tbsp calamint, chopped
salt and black pepper to taste

Shrimp with Calamint and Red Chillies Preparation:


Method:

Heat the olive oil in a large heavy-bottomed frying pan. Add the prawns, garlic and chillies then cook until the prawns are opaque (turning the prawns occasionally). At this point add the vermouth and the calamint. Toss to mix the ingredients and cook for 1 minute. Season with salt and pepper and serve immediately.
