Shitor Din Recipe

Origin: Ghana      Period: Traditional

In the Ga language, shitor (also pronounced: sheto, shito, shitto and shitō) is the word for pepper and is generally applied to a spicy sauce made from oil, dried chillies and dried prawns.

Ingredients:

200g dried prawns, ground or pounded to a powder
400g dried chillies (preferably piri-piris) chopped or ground to a powder
900ml vegetable oil
2 tbsp salt.

Shitor Din Preparation:


Method:

Simply combine all the ingredients in a large pot. Cook over high heat, stirring continually, until all the ingredients are well mixed. Take off the heat, cover and allow to cool naturally to room temperature.

Transfer to clean jars with air-tight lids and store in a cool place. This sauce will keep for several months.
