Sharbat Khodaar
(Vegetable Soup) Recipe

Origin: Libya      Period: Traditional

Ingredients:

200g lamb (with bones)
1 squash
2 potatoes
1 carrot
2 onions
2 garlic cloves
1 tsp kammon hoot
6 tbsp orzo pasta
2 tbsp lemon juice
salt, to taste
1 tbsp flour
1 tsp dried mint, crumbled

(Vegetable Soup) Preparation:


Method:

Add a little oil to a pan and use to fry the lamb and onions until soft (about 8 minutes). Add the kammoon hoot and stir to combine then add the vegtables and garlic along with 500ml water. Bring to a boil, season with salt then reduce to a simmer, cover and cook for about 40 minutes, or until the meat is tender.

Whisk the flour to a slurry with 2 tbsp water then add to the soup and whisk in. Add the pasta and cook for 10 minutes, or until the pasta is tender. Remove the lamb and chop the meat, discarding the bones. Return the lamb meat to the soup, season with the lemon juice and dried mint and serve.
