Shalad Bil Mtesha Basila W'L'Hamad M'Rakad
(Tomato, Onion and Preserved Lemon Salad) Recipe

Origin: Morocco      Period: Traditional

Ingredients:

900g ripe tomatoes, blanched, peeled and de-seeded
1 small red onion, peeled and thinly sliced into rings
1/2 lemon of preserved lemon slices
10 tbsp extra virgin olive oil
5 tbsp lemon juice
1 garlic clove, crushed
2 tbsp flat-leaf parsley, chopped
2 tbsp fresh coriander (cilantro) leaves, chopped
1/4 tsp ground cumin
1/4 tsp paprika
salt and freshly-ground black pepper

Shalad Bil Mtesha Basila W'L'Hamad M'Rakad
(Tomato, Onion and Preserved Lemon Salad) Preparation:


Method:

Finely dice the tomatoes then combine with the onion rings in a bowl. Remove the pulp from the preserved lemons and discard then thoroughly rinse the peel, dry on kitchen paper and cut into strips crosswise before combining with the onion and tomato mix.

Make a dressing by whisking together all the remaining ingredients in a jug. Make certain all the ingredients are thoroughly combined then pour over the salad ingredients. Toss lightly to combine then set aside to marinate for 30 minutes before serving (this can be chilled, if desired).
