Sea Purslane Greens Recipe

Origin: Britain      Period: Traditional

Ingredients:

500g sea purslane leaves
35g butter
3 tsp fresh parsley, chopped
juice of 1/2 lemon
grated zest of 1/2 lemon
salt and black pepper, to taste

Sea Purslane Greens Preparation:


Method:

Add the purslane leaves to a pan, add just enough water to cover. Bring to a boil, reduce to a simmer and cook, covered until just tender (about 10 minutes). Drain well then return to the pan and add the butter, lemon juice, lemon zest and seasonings. Shake over the flame to mix all the ingredients then serve.
