Savoury Lemon Sauce Recipe

Origin: Britain      Period: Traditional

Ingredients:

juice of 1 lemon
freshly-grated zest of 1 lemon
300ml white sauce (make with half milk and half fish or chicken stock)
2 tsp sugar
salt and freshly-ground black pepper, to taste
2 tbsp single cream (optional)

Savoury Lemon Sauce Preparation:


Method:

Combine the milk and stock for the white sauce in a pan, add the lemon zest and simmer for 5 minutes then use this liquid to make the white sauce. When the sauce has thickened add the lemon juice and sugar then season to taste.

Serve as an accompaniment to grilled fish or grilled chicken (use the appropriate stock when making the white sauce).
