Sauce Gumbo RecipeOrigin: Niger Period: Traditional |
Ingredients:
450g beef, cut into small pieces
Sauce Gumbo Preparation:Method:Fry the beef and onion in the oil until the meat is well browned then set aside. In a pan add the tomato paste (which has been mixed with the water). Season and allow to simmer. Meanwhile, in another pot add the okra and baking soda and cover with 700ml water. Bring to a boil, reduce to a simmer and cook until the okra begins to colour. Mix together all the ingredients in this pot and cook for about 20 minutes or until the meat is tender. Serve hot over rice, macaroni or couscous. |
