This is a traditional Chinese way of preparing both wild Mustard Greens and Shepherd's purse ready for cooking. Ingredients1 generous bunch Shepherd's purse plenty of salt
Salted Shepherd's Purse Preparation:Method:Wash the Shepherd's purse and spin them dry or pat dry with paper towels. Chop into 2cm pieces then place in a glass or earthenware container and sprinkle liberally with salt. Allow to stand over night to extract the juices. These will keep for up to a week in the fridge (do not remove the salt or juices). They're excellent for use in stir-fries, dumplings or as part of wonton fillings. |
