Baked Green Bell Pepper Salad
(Madammas Aljazar) Recipe

Origin: Libya      Period: Traditional

Ingredients:

2 tomatoes, chopped
4 green chillies, chopped
2 green bell peppers, sliced
1 tsp ground coriander seeds
1 tsp caraway seeds, crushed
2 tsp lemon juice
1 garlic clove, finely chopped
2 tsp salt
3 tbsp olive oil

Baked Green Bell Pepper Salad
(Madammas Aljazar) Preparation:


Method:

Combine the tomatoes, chillies, garlic and green bell pepper in a bowl. Line a baking dish with aluminium foil and pour the vegetable mixture on top. Place in an oven and roast at 180°C, stirring occasionally, until the mixture begins to blacken.

Remove from the oven and cut away any blackened pats. Place the remaining vegetables in a bowl and mash well. Add all the remaining ingredients and stir to combine. Serve as an accompaniment or as a starter with bread.
