Salata ma Jibna
(Salad with Parmesan Cheese) Recipe

Origin: Morocco      Period: Traditional

Ingredients:

180g onions, shredded
180g cabbage, shredded
90g carrots
180g tomatoes
60ml extra-virgin olive oil
60ml lemon juice
2 tbsp vinegar
1 tsp salt
1/4 tsp coarsely-ground black pepper
1 garlic clove, mashed
3 tbsp grated Parmesan cheese

Salata ma Jibna
(Salad with Parmesan Cheese) Preparation:


Method:

Peel the carrots and slice into very thin rounds then dice the tomatoes into 1cm pieces. Combine the carrots and tomatoes with the cabbage and onions in a bowl.

In a separate bowl whisk together the olive oil, lemon juice, vinegar, salt and black pepper. Add to the vegetables and toss to combine. Arrange the salad in small dishes, sprinkle the garlic and cheese over the top then serve.
