Salata
(Egyptian Salad) Recipe

Origin: Egyptian      Period: Traditional

This is an Egyptian version of a traditional Arabic salad that you'll encounter throughout the Arab world.

Ingredients

1 small, fresh, green lettuce
1 small red onion
6 spring onions
2 small cucumbers
3 ripe tomatoes
handful of flat-leaf parsley leaves
handful of mint leaves
5 tbsp extra-virgin olive oil
juice of 1 lemon
1 garlic clove, crushed
sea salt and freshly-ground black pepper to taste

Method:

Peel and finely-chop the onion, chop the cucumber into small cubes and do the same for the tomatoes. Finely-chop the herbs and shred the lettuce. Add all the ingredients to a bowl and mix thoroughly. Add the garlic, olive oil and lemon juice then season with salt and pepper. Toss the salad to mix all the ingredients and serve.
