Le Salade Côte Cap Vert Recipe

Origin: Senegal      Period: Traditional

Ingredients:

Cut 600g of any salad greens (lettuce, spinach, watercress, mustard greens etc) cut into coarse chunks
4 hard boiled eggs, finely chopped and passed through a sieve
250ml salad oil (extra-virgin olive oil)
120ml tarragon vinegar
1 tsp garlic powder
1 tsp salt
1/2 tsp freshly-ground black pepper
1 tbsp mixed herbs
2 tbsp honey

Le Salade Côte Cap Vert Preparation:


Method:

Arrange the greens in mounds on plates and sprinkle the eggs over the greens. Meanwhile mix all the remaining ingredient in a jar, shake well and serve separately in a bowl.
